Frequently asked questions

I am new to millets. Which one should I start with, and how do I replace rice?

If you are a beginner, we highly recommend starting with Foxtail Millet (Korralu) or Little Millet (Samalu). They have a mild flavor and a texture very similar to rice when cooked. You can substitute them using a 1:1 ratio in your everyday meals—they taste wonderful with traditional sambar, rasam, dals, or even made into upma and khichdi. Just remember to soak them before boiling!

Why do I need to soak millets before cooking, and for how long?

Soaking isn't just about softening the grain—it's actual kitchen science! Whole millets contain a natural compound called phytic acid, which locks up nutrients and can make them harder to digest. Soaking activates natural enzymes that break down this acid, unlocking the trapped minerals (like iron and zinc) so your body can fully absorb them.

  • Small Millets (Foxtail, Kodo, Little, Barnyard, Browntop): Soak for 6 to 8 hours (or overnight).
  • Major Millets (Ragi, Jowar, Bajra): Soak flours or whole grains for 4 to 6 hours depending on the recipe.
