Description

These artisanal crackers swap refined flour for the rich, nutty profile of unpolished Foxtail Millet. Cleanly seasoned with toasted sesame seeds, cracked black pepper, and fresh herbs, they offer a sophisticated, high-fiber alternative to store-bought crisps. They pair beautifully with gourmet dips, cheese boards, or a warm afternoon cup of tea.

Ingredients

  • 1 cup Foxtail Millet (Korralu) Flour – finely milled

  • ¼ cup Chickpea Flour (Besan) or Tapioca Starch – for structural binding

  • 1 tbsp Black and White Sesame Seeds – mixed

  • ½ tsp Coarsely Cracked Black Pepper

  • ½ tsp Ajwain (Carom Seeds) or Dried Rosemary

  • ½ tsp Fine Pink Himalayan Salt (adjust to taste)

  • 2 tbsp Cold-Pressed Groundnut Oil or Virgin Olive Oil

  • ¼ cup to ⅓ cup Warm Water – to bind the dough

Instructions

1. Dough Preparation

  1. Dry Mix: In a large mixing bowl, whisk together the foxtail millet flour, chickpea flour, sesame seeds, cracked pepper, ajwain, and pink salt until completely integrated.

  2. Incorporate Fat: Drizzle the cold-pressed oil over the dry ingredients. Use your fingertips to rub the oil into the flour until the mixture resembles fine breadcrumbs. This step ensures a beautifully flaky, crisp texture.

  3. Hydrate & Knead: Slowly add warm water, a tablespoon at a time, bringing the dough together. Knead gently for 2–3 minutes until you achieve a smooth, firm, non-sticky dough. Cover with a damp cloth and let it rest for 10 minutes.

2. Shaping the Crackers

  1. Preheat: Preheat your oven to 180°C (350°F) and line a large baking sheet with parchment paper.

  2. Roll Thin: Place the rested dough between two sheets of parchment paper (to prevent sticking without adding extra flour). Roll it out evenly using a rolling pin until it is roughly 2mm thick. The thinner you roll it, the crispier the crackers will be.

  3. Cut: Remove the top sheet of parchment. Use a pizza cutter, a sharp knife, or a geometric cookie cutter to slice the dough into squares, rectangles, or diamonds.

  4. Dock: Use a fork to prick holes gently across the surface of each cut piece. This prevents the crackers from puffing up like puris in the oven, ensuring they remain flat and crunchy.

3. Baking to Perfection

  1. Arrange: Carefully transfer the cut shapes onto your lined baking sheet, leaving a tiny bit of whitespace between each.

  2. Bake: Place in the middle rack of the preheated oven and bake at 180°C for 15 to 20 minutes. Keep a close eye on them around the 15-minute mark; they are done when the edges turn a delicate golden brown.

  3. Cool: Remove from the oven. The crackers might feel slightly soft right out of the oven, but they will crisp up beautifully as they cool down. Transfer them to a wire cooling rack and let them cool completely.

4. Service & Presentation

  1. Present: Serve piled elegantly in a minimalist ceramic bowl alongside a fresh hung-curd dip, hummus, or traditional tomato chutney.

Chef’s Notes & Tips

  • Thickness Control: Uniformity is key. If your dough is thicker in the center than at the edges, the outer crackers will burn while the center ones stay chewy. Aim for a uniform, paper-thin sheet.

  • Flavor Expansions: This base dough is incredibly versatile. You can easily adapt the flavor profile for your brand by adding finely minced fresh curry leaves, a pinch of garlic powder, or even a touch of chili flakes for a spicy kick.

  • Storage Integrity: Once fully cooled, store the crackers in an airtight glass jar. They retain their premium, snappy crunch for up to 2 weeks at room temperature.
