Instructions
1. Cooking the Grain
-
The Soak: Wash the whole sorghum grains thoroughly in cold water. Soak them in plenty of water for 6 to 8 hours (or overnight). Sorghum has a robust outer bran layer; proper soaking ensures an even, tender texture.
-
Boil to Al Dente:
-
Stovetop Method: Drain the soaked grains and place them in a heavy-bottomed saucepan with 3 cups of water and ½ tsp of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 35–40 minutes until tender but still pleasantly chewy.
-
Pressure Cooker / Instant Pot: Cook for 4–5 whistles (or 15 minutes on High Pressure in an Instant Pot) with 2.5 cups of water.
-
-
Cool and Fluff: Drain any excess water completely. Spread the cooked sorghum out on a wide tray and fluff it gently with a fork. Let it cool completely to room temperature before assembling the salad.
2. Preparing the Dressing
-
Whisk: In a small glass bowl or mason jar, combine the extra virgin olive oil, fresh lemon juice, minced garlic, cracked black pepper, roasted cumin powder, and a pinch of salt. Whisk vigorously (or shake the jar) until the dressing emulsifies beautifully.
3. Assembly
-
Combine: In a large, minimalist wooden or ceramic mixing bowl, toss together the cooled sorghum grains, diced cucumber, cherry tomatoes, red bell pepper, minced onion, parsley, and mint.
-
Dress: Pour the zesty vinaigrette over the salad. Use a wide spatula to gently fold the ingredients together, ensuring the sorghum grains absorb the bright flavors.
-
Finish: Gently fold in the crumbled feta cheese or firm tofu right at the end to keep them intact.
4. Service
-
Chill and Serve: While you can serve it immediately, letting the salad rest in the refrigerator for 30 minutes allows the grains to deeply marinate in the dressing. Serve chilled as a refreshing lunch or a premium side dish.
Chef’s Notes & Tips
-
Meal Prep Champion: Unlike leafy green salads that wilt within hours, this sorghum salad holds its structure beautifully. It actually tastes better on Day 2 and Day 3 as the grains continuously absorb the lemon and herb infusion.
-
The Crunch Factor: Make sure the vegetables are cut into a uniform, small dice matching the scale of the sorghum grains. This ensures you get a perfect balance of texture and flavor in every single spoonful.
-
Grain Substitutions: This exact framework works brilliantly with other whole millets like Little Millet or Kodo Millet—just reduce the cooking time slightly since smaller millets cook much faster.
